The Kautz Family grows Cabernet Sauvignon grapes in several of Lodi’s sub-appellations as well as the Calaveras County growing region of the Sierra Foothills. These different locations provide diverse soils and climate that, when combined, create a more complex wine than one region alone.
At Ironstone, we use crop reduction, leaf removal, organic materials, and drip irrigation to improve the quality and intensity of flavors. Cover crops, which attract beneficial insects, are also employed. In addition, we place owl and wood duck boxes around the vineyards and ponds helping to preserve the surrounding habitats.
The 2008 Cabernet Sauvignon is rich and complex, but still easily approachable. Its dark cherry and toasted oak aromas tantalize the taste buds that will savor juicy black currant, raspberry and dark cherry flavors. This luscious, well-balanced, wine has a sweet middle palate that finishes with a lovely toasty oak component.
Cabernet Sauvignon is a classic red wine that is known for its distinct flavor as well as its magnificent structure. Try this wine with grilled or sautéed meats, grilled marinated vegetables and maybe even some game like venison or boar.
